Last weekend, I made pancakes…..and I survived!! As much as I love to learn how to cook, any attempts at doing so have made me into a pariah of sorts in our kitchen. Consider the time I volunteered to help cook Sinigang na Baboy (Pork in Sour Broth). I was put in charge of the kangkong (water spinach) and what I ended up with were stalks because I stripped the leaves and threw them away. I don’t know why I did it.ย I do have common sense though, just don’t put me in the kitchen.
Anyway, I decided to cook DW pancakes for lunch with bananas and raisin. I thought it would be a nice change from the lugaw and fish and fruits he always has for his meals. For this project,ย I used Pillsbury’s One-Step Pancake Mix. I like this brand because I didn’t need to add eggs and at this stage, we’re still screening for food that DW might be allergic to. DW eats egg whites now and he could probably eat the whole thing when he gets older. One other thing is that all you need to do with this mix is just add water! Seems fool-proof enough I say ๐
For the ingredients, you just need these:
raisins and bananas!
Chop the bananas coarsely and mash them a bit so that you could still bite into chunks of banana in the pancake. Throw the raisins into the pancake mixture as is. No need to measure, just eyeball it. I used 1 cup of raisins and about a cup and a half of bananas for this batch.
Mix ’em all up, fire up a teflon pan so that you don’t need oil or butter to coat the pan and therefore add fat to the pancakes.
Create mini pancakes so your little one can grab them like cookies

You can also add oatmeal to the batter but I skipped that because the last time DW had a bowl of oatmeal, he developed rashes:(

February 15, 2010 at 10:15 pmPretty soon, you can make cheesy caldereta too! ๐ I’ll try out those special cookies we’ve been talking about… not the one that makes you loopy. ๐ By the way, you should try putting the raisins in hot water for a few minutes so they don’t dry up and remain chewy when you cook them. It’s what I do for my oatmeal-raisin cookies. ๐
